-60% Blend: a delicate and aromatic bouquet of Forastero blends. Sweet, delicate and overwhelming at the same time, thanks to the fermentation process in cultivar that, together with the roasting process, are its distinctive features. Clean to the palate, it pleasantly overwhelms the taste receptors releasing notes of molasses and cacao. It melts quickly, developing further the tasting notes and opening up the palate and the taste receptors to perceive the sweet and fruity notes of the pairing with wine/rhum.
- 75% Blend: a delicate and aromatic bouquet of Forastero and Criollo blends, with floral and toasted notes, followed by hints of vanilla. Its aroma becomes stronger and persistent as one lingers into it, releasing a chocolaty and slightly bitter flavour due to the high cocoa content.
- 85% Blend: an intense and overwhelming bouquet with slightly toasted, peated nuances. The toasted profile and aromatic intensity of the blends selected, together with the slightly smokey notes that develop during the production and roasting process, are the distinctive features of this blend. It melts slowly, releasing its complex yet delicate cacao aroma with no acidity at all.
- 100% Venezuela Blend: a fine 100% cocoa solids dark chocolate blend made with Fino Aromatico cacao from Venezuela only, which comes with a very distinctive aromatic complexity and notes of red fruit, ripe red cherry, and cream. The entire production process, from fermentation to roasting and conching, is carefully overseen and neither soya lecithin nor vanilla are added to the mix to enhance the overall clean taste.
